Quality through Ecology
We are convinced that only a healthy, ecologically balanced vineyard is able to deliver really good wines. That is why we went into ecological wine making between the years 1995 and 1997. Since then we are certified as an ecological vineyard and a member of the German National Association For Ecological Winemaking ECOVIN.
This meant a restoration of those conditions that had been among the basics of winemaking in the Mosell valley ever since: The natural variety of the flora and fauna of our vineyards, unladen by chemical-synthetical pesticides and fertilizers. A careful work with the leaves of the grapevines helps with fostering healthy grapes. And the consequent reduction of crops in combination with the healthy slate soil is giving birth to the uncomparably complex taste of our wines and their composition, their mineral quality and their aromatic contents.
All these elements come from the vineyard and we care for them in our cellars by carefully vinificating them almost entirely in big oak casks. And we also care for the fact that the musts can take their time to upgrade into those wines that are slumbering within them. In this we only understand ourselves as sensitively attending this process that is fascinating again and again – year by year.
